We'll take it from NUVO's food critic emeritus Neil Charles: "There can be doubt that, since I first dined at St. Elmo over 20 years ago, the quality of their meat has improved enormously, quite an achievement when one considers the sheer volume of cattle passing through its various kitchens." And it was pretty damn good to begin with. New York Strips are every bit as tender and properly aged as you'd expect. And you really can't go wrong with any other cuts, notably the filet mignon (more or less perfect, night in, night out).
