Make your own Bloomington Brewing pickles



So cheers to the fun parts of 2015 and here’s to 2016 with a Rooftop IPA Pickles recipe! Bloomington Brewing Company Master Chef Michael Fox scaled a batch down for NUVO readers, with a serving suggestion:

“We use Rooftop IPA and serve the pickles alongside our strombolis and BLTs.”

2 large seedless cukes
1 qt of white or cider vinegar
3 cups Rooftop IPA
1 cup water
2 cups sugar
2 tbsp pickling spice
1 tsp red chile flakes
1/4 cup plus 1 tbsp kosher salt

Bring all to a boil and simmer 5 min. Cool completely before adding sliced cucumbers. Make sure all cukes are covered by brine. Refrigerate. Ready to eat in two days.
